Honduras - Rosa Romero | Tropical Fruit, Melon and Black Tea | For Filter Brewing

Our newest micro-lot filter is an anaerobic, naturally fermented Parainema that comes to us from Rosa Romero's "El Piñalito" family farmstead in Honduras. 

Having helped her father tend to the land and coffee trees in her youth, Rosa has an incomparable knowledge of the farm she has inherited. Along with this, she also picked up on and held onto her father's interest in naturally prepared coffees and the unique flavour profiles that came along with them. 

Since taking on responsibility for the land, Rosa and her own children still maintain the farm as well as keeping up to date with modern practices, ensuring both a high standard of coffee along with a deep connection to the plants they harvest. 

This coffee has been selected specifically by Ferg following an origin visit to meet with Rosa. He chose it specifically for filter brewing.

The coffee is a Parainema, a hardy variety known for it's powerful flavour profile and aromatics. Coupled with an anaerobic, natural fermentation, it offers some funk and booze on the palate along with a gorgeous herbal and tropical fruit character.

While the process is present on the palate, it works in total harmony with the character of the Parainema, providing us with a small-batch and beautifully balanced coffee. This is the kind of natural we've always loved.
